It is that time of the year again where there is an over abundance of hard boiled eggs to be used.  With spring, comes Easter and with Easter, comes eggs - lots of eggs!  One of my favorite ways to use up hard-boiled eggs is to make egg salad.  Here is a bit of a twist on an old favorite - curried egg salad!  If you are a curry fan, you must try this recipe.  You can serve this egg salad on bread, the classic way, or you can change it up a bit and make wraps.  Either way you serve the salad, I guarantee this curried egg salad will be a hit with your friends and family.

Tips:

If you like a strong curry flavor, use the greater amount of curry powder in the recipe.  I tend to use about 1/2 teaspoon for a subtle curry flavor.

Now this is the way to have your Baileys and coffee!  This delicious dessert comes from Clodagh's Irish Kitchen and is easy to prepare.  It is also pleasing to the eye.  If you are a fan of tiramisu or trifles, you will certainly enjoy this Irish-Italian dessert!  You can make this treat in individual portions (as shown by the pictures) or if you prefer, one big beautiful bowl.  Either way, friends and family will love this Irish take on an old Italian classic.

Tips:

This recipe calls for raw egg yolks.  If you are concerned about the safety of using raw eggs, please do not make this dessert.

The original recipe called for a 1/2 cup cocoa, I prefer to use about a 1/4 cup cocoa.

This delicious meal is perfect for the month of March (or really anytime of the year as it really is tasty).  With St. Patrick's Day being on March 17th, why not start the celebration early with this incredible slow cooker recipe?  The recipe (which I found in the Irish Cooking Bible cookbook) calls for a bottle of Irish stout beer and is simple to make.  It also is perfect with my garlic and herb mashed potatoes.  These fall-off-the-bone ribs will be an instant hit with friends and family for many years to come!

Tips:

I used a bottle of Guinness stout beer and the flavor came out fantastic!

You can chop up the raw bacon and cook according to the recipe, or you can cook the bacon whole, drain on paper towels, and crumble bacon once cooled.

I developed this delicious chicken recipe many years ago.  The great thing about this recipe is that most of the work is done in the morning.  The dish then cooks all day in the crockpot.  That way you have the rest of the day to complete tasks or work and still have an amazing home-cooked dinner ready in the evening.  This dish has a lot of flavor, and the vegetables and herbs compliment the chicken perfectly.  This meal is made even better when topped with a mouthwatering sauce.  I hope you enjoy my family's favorite crockpot chicken!

Tips:

You can skip making the sauce if you want to save on the fat and calories.  If you do so, when the dish is done cooking, season to taste and then serve.

If you are looking for an easy Valentine's dinner for two, look no further!  This delicious steak dinner comes from Martha Stewart, and I love the simplicity of this meal!  The recipe is easy and straightforward, leaving you plenty of time to enjoy that special person in your life.  I also included a recommendation for a wine pairing in the tips section that makes this delicious meal shine.  I really encourage you to try this recipe, because it truly is a winner.

Tips:

Either the day before or the morning that you prepare the steak, I suggest that you rub the steak (or steaks if you double the recipe) generously with Kosher salt and freshly ground black pepper.  Use up to 1 teaspoon Kosher salt per pound and about a 1/2 teaspoon black pepper per pound.  Place the salt and pepper rubbed steak on a rack, and place the rack on a cookie sheet or other large pan.  Put in refrigerator, about 6 to 24 hours, without covering it.  Let it sit one hour at room temperature...

Raspberry and chocolate are a perfect marriage of flavors.  There is something about the sweetness of the berries and the richness of the chocolate that gets our taste buds salivating.  I found this rich chocolate dessert recipe on a Baker's Semi-Sweet Chocolate bar.  It is a very easy pie to make, and my family absolutely loved it.  With only 5 ingredients and 15 minutes of your time, you will have a beautiful and delicious pie!  This would also make an amazing dessert for Valentine's Day.

Tips:

I used a can of chocolate frosting to hide the foil edging of the pie.  I found the frosting in the baking aisle of the grocery store.

I like to keep the chocolate filling of the pie chocolate, so I did not add raspberry jam to the chocolate filling.  I put the raspberry jam on top of the chocolate instead of mixing them.  You can do it either way as I will include both ways in the recipe.

These nachos are the perfect appetizer for Super Bowl Sunday.  What makes them perfect is bacon!  Anything with bacon in it is guaranteed to be a big hit for your Big Game day party.  I got this recipe comes from the July 7, 2014 issue of People magazine.  These nachos are loaded with cheddar cheese and creamy avocado.  They are simply delicious.  I suggest that you top these babies with a dollop of sour cream and a jalapeno pepper.  This recipe is sure to be a winner!

Tips:

I like to use pickled jalapenos in this recipe.  I place each sliced jalapeno on paper towels to remove the excess moisture before placing them on the nachos.

Some of us are still recovering from excess calories during the holidays, so with February upon us and Valentine's Day around the corner, I decided to post this rich dark chocolate smoothie to help satisfy chocolate cravings.  This is both a healthy and delicious alternative to the beginning of February.  This chocolate sweet drink comes from the March 2017 edition of Cooking Light magazine.  It is has no dairy in it.  The addition of dates makes this smoothie extra sweet!

If you are looking for a healthier snack choice, these chickpeas will satisfy your cravings for salty snacks such as chips and pretzels.  As a bonus, they supply 5 grams of protein per serving.  The protein makes sure that these chickpeas stick with you so you aren't hungry for longer.  They are more filling than a serving of potato chips.  This recipe comes from Cooking Light magazine.  I love the flavor of these crispy chickpeas.  The fresh parmesan and oregano are a delicious combination!

Make sure you dry the chickpeas with paper towels.  The drier the chickpeas the crispier the dish is.  You can even let them sit overnight for optimal results.

If you are a fan of chai tea, I have the perfect truffle for you!  These chai truffles come from the December 2015 publication of Southern Living's Christmas at Home magazine.  I can definitely say that these little chocolates are heavenly.  If you want to impress friends and family with a gourmet tasting truffle, I recommend you make these chai chocolates.  As an extra bonus, they are easy to prepare, and they keep in the refrigerator for 2 weeks!  I enjoy these little desserts while sipping coffee (but I imagine that they also would be delightful with chai tea) as the hot liquid melts the chocolate and the spices onto my tongue.  The flavor is exquisite!
