If you are looking for an easy Valentine's dinner for two, look no further!  This delicious steak dinner comes from Martha Stewart, and I love the simplicity of this meal!  The recipe is easy and straightforward, leaving you plenty of time to enjoy that special person in your life.  I also included a recommendation for a wine pairing in the tips section that makes this delicious meal shine.  I really encourage you to try this recipe, because it truly is a winner.

Tips:

Either the day before or the morning that you prepare the steak, I suggest that you rub the steak (or steaks if you double the recipe) generously with Kosher salt and freshly ground black pepper.  Use up to 1 teaspoon Kosher salt per pound and about a 1/2 teaspoon black pepper per pound.  Place the salt and pepper rubbed steak on a rack, and place the rack on a cookie sheet or other large pan.  Put in refrigerator, about 6 to 24 hours, without covering it.  Let it sit one hour at room temperature...

Some of us are still recovering from excess calories during the holidays, so with February upon us and Valentine's Day around the corner, I decided to post this rich dark chocolate smoothie to help satisfy chocolate cravings.  This is both a healthy and delicious alternative to the beginning of February.  This chocolate sweet drink comes from the March 2017 edition of Cooking Light magazine.  It is has no dairy in it.  The addition of dates makes this smoothie extra sweet!

If you are looking for a healthier snack choice, these chickpeas will satisfy your cravings for salty snacks such as chips and pretzels.  As a bonus, they supply 5 grams of protein per serving.  The protein makes sure that these chickpeas stick with you so you aren't hungry for longer.  They are more filling than a serving of potato chips.  This recipe comes from Cooking Light magazine.  I love the flavor of these crispy chickpeas.  The fresh parmesan and oregano are a delicious combination!

Tips:

Make sure you dry the chickpeas with paper towels.  The drier the chickpeas the crispier the dish is.  You can even let them sit overnight for optimal results.

This is a beautiful and elegant main dish for any celebration.  It especially works as a great Christmas meal.  Beef tenderloin is a special cut of meat that is absolutely delicious when prepared properly.  My recipe will give you a well seasoned and tender dish that you and your guests will love!  The secret is rubbing Kosher salt onto the beef and letting it sit uncovered in the refrigerator for at least 24 hours.  This process will tenderize your meat, making it the best you have ever had!  The tenderloin is simply seasoned, seared, and then roasted for optimum flavor.  Serve alongside a yummy garlic sauce or a horseradish sauce to round out this outstanding main attraction.

I always know that it is truly autumn when I start seeing a lot of squash recipes in magazines.  I found this tasty recipe by Rachel Ray in People magazine.  If you're a vegetarian looking for a showcase main entrée, look no further!  These four cheese butternut squash make a lovely presentation for entertaining or holiday events.  They are a bit involved, but so worth the effort!  They are that delicious!  Everything tastes better with cheese - right?

Tips:

"To tell if the squash is cooked through, gently pierce the meat of the squash with a pairing knife," says Rachel Ray.  "It should slide in easily with no resistance."

Make sure you check that the squash is cooked all the way through.  Mine took an extra 20 minutes to cook.

You can also adjust the cheeses to your taste.  I'm not a big fan of pecorino cheese, so I put in about 1 ounce pecorino and added more Parmigiano-Reggiano.

This terrific recipe comes from the Sept./Oct. 2017 issue of Midwest Living magazine.  Nothing celebrates October like bratwurst, and this recipe is a perfect way to welcome autumn.  It was an added bonus that this recipe calls for quite a bit of sage, as I have sage growing in my garden.  The sage butter that is spooned over the dish makes it savory heaven.  I know I will be making this wonderful meal for years to come, and I hope you enjoy it as much as my family and I do.

Tips:

You can substitute turkey bratwurst for the pork bratwurst.  Make sure you buy the uncooked variety.

When browning the butter, keep a careful eye on it.  Butter will burn!  You want a nice brown color, and the color of the butter changes fast.

This is an amazing and versatile salsa!  It's so easy to throw together quickly for a party.  It can be an appetizer or a topping for any sort of grilled meat (I suggest beef or chicken).  You can also adjust how spicy this salsa is by the amount of jalapeño you add.  If you have family members that are not fans of spicy foods and others that desire a kick to their salsa, you can make it mild and then serve it with hot sauce.  This will allow people to have their salsa exactly how they prefer it.  This recipe is great for any summer party or holiday.  As a bonus, it is healthy too!  So grab some avocados and let the party begin.

You can substitute canned corn to 2 cups frozen corn, rinsed under cold water to thaw OR 2 cups fresh corn; cooked, cooled and kernels removed from the cob.

This recipe comes from Nigella Lawson, and it is truly delicious!  This baked egg and potato hash makes a lovely dish for breakfast or brunch.  I admit that before this recipe I'd never made eggs like this, but I always appreciate new ways to cook something!  Try adding some fresh fruit or muffins to add some variety to your meal (I have a number of recipes on this blog if you need ideas).

I found Sriracha sauce to compliment this dish, but you can use whatever hot sauce you prefer for extra flavor.

This is a great recipe to make when you want ice cream, but you don't want all the fat and sugar that comes with it.  I found this yummy banana yogurt recipe in People magazine, created by Judy Joo.  It is very easy to make but give yourself plenty of time for the chilling.  The results are spectacular!  This creamy banana yogurt with fresh strawberries is absolutely delicious, and the almonds add a great layer of crunch too!

Freeze the sliced bananas on a parchment-lined plate or tray.  The pieces won't stick together in a clump when you're ready to blend.

Along with most of the worlds population, I am addicted to chocolate.  Every once in a while (or everyday), I have to feed my craving!  These little chocolate cupcakes are perfect for a chocolate fix.  I found this recipe in Southern Living magazine, the April 2017 edition.  If you crave intense chocolate, you will enjoy the original recipe.  I was curious to see what the outcome would be with a few changes to the original recipe.  Instead of dark chocolate, I used semi-sweet chocolate chips.  My family liked these cupcakes even better than the original ones!  I topped the cupcakes with whipped cream and a few raspberries.  It was scrumptious.  The raspberries, chocolate, and cream complemented each other perfectly.  You can't go wrong with chocolate!
