This cake is a new family favorite.  It is delicious and sweet.  I started with a basic buttermilk cake recipe that makes a moist yellow cake.  I then added mascarpone cheese to the frosting.  It adds an extra richness and 'yum' factor to the cake.  The cheese also acts as a stabilizer to the frosting - so it holds up well over time.  The frosting is not overly sweet, but just sweet enough to counter balance the sweetness of the cake perfectly.  Make sure you read through the directions carefully before you begin making this heavenly cake!

Preparation time is 25 minutes.  Bake time is 25 minutes.  Frosting and filling preparation time is 40 minutes.  Total time is 1 1/2 hours (plus cooling time).

This is a great recipe to make when you want ice cream, but you don't want all the fat and sugar that comes with it.  I found this yummy banana yogurt recipe in People magazine, created by Judy Joo.  It is very easy to make but give yourself plenty of time for the chilling.  The results are spectacular!  This creamy banana yogurt with fresh strawberries is absolutely delicious, and the almonds add a great layer of crunch too!

Tips:

Freeze the sliced bananas on a parchment-lined plate or tray.  The pieces won't stick together in a clump when you're ready to blend.

Preparation time is 10 minutes.  The total time is 8 hours, 10 minutes (includes freezing).

It's strawberry season, and I can't think of a better way to enjoy these scrumptious berries than in a pie.  This pie is an absolute favorite among my family, and I guarantee that if you love strawberries, you will have a difficult time only eating one slice.  This dessert is unforgettable - with whole strawberries placed on top of a sweet cream filling and a homemade strawberry glaze poured over the pie.  Give this pie of the month a try!  It really is amazing.

Tips:

If you have any leftover glaze, you can refrigerate and use in plain yogurt or use like a strawberry jam.

Please refer to pictures when whipping cream.  You want soft peak for the initial whipping.  When you whip the cream and cream cheese together, you want a stiff peak.

Organic strawberries will give you the best strawberry flavor.  I highly recommend buying organic strawberries for this pie, even though you will pay more.

This recipe is simple but so good!  You can eat it for breakfast or as just a light easy snack. It is perfectly refreshing for a hot summer day.  This recipe is also good for you.  Isn't it great when a delicious snack can taste good and be healthy at the same time?

Directions:

I start off with seasonal berries.  My favorite mix is strawberries, raspberries, blackberries, and blueberries.  You can also throw in some banana slices too. (The bananas will make it even sweeter). 

I place the berries in the bowl and add a dollop of plain Greek yogurt - the nice thick creamy stuff!  I then top it with a drizzle of raw local honey and a sprinkle of cinnamon.

Stir that glorious mess with a spoon!  I add another drizzle of honey and another sprinkle of cinnamon!  After that, it is ready to eat!  You can also add some granola, for the crunch factor, if you so desire.

I thought I would share with you how I do my berries.  This is a great breakfast side dish that can be assembled easily.  You can serve along with plain Greek yogurt, raw local honey, cinnamon, and if desired granola (homemade is yummy).  Your guests can make their own yogurt bowls!

Adding the bowl of berries to a buffet style breakfast helps add color and diversity too.  I usually serve them with my banana chocolate chip muffins and an overnight breakfast casserole.  I usually make my overnight breakfast egg pie for an easy morning.  As a hostess, you want to enjoy your guests and not spend it away from them cooking in the kitchen!
