If you are looking for an easy Valentine's dinner for two, look no further!  This delicious steak dinner comes from Martha Stewart, and I love the simplicity of this meal!  The recipe is easy and straightforward, leaving you plenty of time to enjoy that special person in your life.  I also included a recommendation for a wine pairing in the tips section that makes this delicious meal shine.  I really encourage you to try this recipe, because it truly is a winner.

Tips:

Either the day before or the morning that you prepare the steak, I suggest that you rub the steak (or steaks if you double the recipe) generously with Kosher salt and freshly ground black pepper.  Use up to 1 teaspoon Kosher salt per pound and about a 1/2 teaspoon black pepper per pound.  Place the salt and pepper rubbed steak on a rack, and place the rack on a cookie sheet or other large pan.  Put in refrigerator, about 6 to 24 hours, without covering it.  Let it sit one hour at room temperature...

Some of us are still recovering from excess calories during the holidays, so with February upon us and Valentine's Day around the corner, I decided to post this rich dark chocolate smoothie to help satisfy chocolate cravings.  This is both a healthy and delicious alternative to the beginning of February.  This chocolate sweet drink comes from the March 2017 edition of Cooking Light magazine.  It is has no dairy in it.  The addition of dates makes this smoothie extra sweet!

If you are a fan of chai tea, I have the perfect truffle for you!  These chai truffles come from the December 2015 publication of Southern Living's Christmas at Home magazine.  I can definitely say that these little chocolates are heavenly.  If you want to impress friends and family with a gourmet tasting truffle, I recommend you make these chai chocolates.  As an extra bonus, they are easy to prepare, and they keep in the refrigerator for 2 weeks!  I enjoy these little desserts while sipping coffee (but I imagine that they also would be delightful with chai tea) as the hot liquid melts the chocolate and the spices onto my tongue.  The flavor is exquisite!

This is a delicious and lovely fall cake that features pears.  Upside-down cakes are wonderful, because they are very easy to make and at the same time look like they were made by a master chef.  One of the ingredients that sets this cake apart is the addition of cardamom.  If you have never used cardamom in a recipe before, I encourage you to give this recipe a chance as the cardamom in it is subtle but really enhances the flavor of the cake.  If you love pears and the taste of fall spices, give this yummy pear upside-down cake a try!

This pie is my husband's favorite pie, and every year during October, he starts hinting about pecan pie.  I have been making this pie for at least 25 years now, and it is truly a winner.  This is a great pie to make if you are a first timer to pie-making, because it is so easy.  If you are a pecan fan or if someone you love is, you must try this recipe.  There is nothing fancy about this pie.  It's just straight up pecan pie, simplicity at its best, but that is one of the reasons it is so good!  I recommend that you grab some pecans, make a pastry shell, and create something beautiful this weekend!

Tips:

For those who must have chocolate added to their pie - simply melt a 1/2 cup semi-sweet chocolate chips with the butter mixture.

I made this flavorful dish for the first time last week.  It was so delicious that I had to include the recipe in my blog.  I found this gem in the May 2017 edition of Southern Living Magazine.  The one pound of multicolored sweet peppers really caught my eye.  You see...I have a garden full of sweet peppers, and I am constantly looking for ways to use them in recipes.  This recipe is yummy and also lets me use peppers from my garden.  As a bonus, I also love pasta.  It seemed the perfect recipe for me.  I hope you enjoy it just as much as I do!

I got this wonderful recipe from the Farm to Table cookbook.  It is the perfect recipe to use up garden tomatoes.  The red peppers, chives, and thyme also add an incredible amount of flavor to this quiche.  Topped off with ricotta and parmesan cheese, this quiche tastes just perfect!  Another great thing about this recipe is that it uses puff pastry which makes this quiche extra easy to prepare.  I hope you enjoy this last taste of summer!  If you make this summer vegetable and herb quiche, please let me know what you think of it.

Tip:

I could not find a puff pastry that exact weight, so I used Pepperidge Farm Puff Pastry Sheets.  It comes with two pastry sheets.  Two pastry sheets equal 17.3 ounces (1.1 pounds).  Lay one sheet on top of another, and with a rolling pin, roll the pastries out.  It came out perfectly.

Preparation time is 45 minutes.  Total time is about 1 hour and 5 minutes.

Here is another great recipe from Ina Garten.  This risotto is crazy easy to prepare!  All you do is toss the ingredients together in a pot and bake it all in the oven.  This awesome recipe comes from her Barefoot Contessa: how easy is that? cookbook.  If you ever made risotto the traditional way, you will be amazed at how easy this risotto is to make!  I love this recipe for so many reasons.  For one, it is delicious.  Two - it frees up your time, so you can focus on the main meal.  This dish goes wonderfully with the scallops Provençal from an earlier post, but feel free to add it to any main meal.  Give this parmesan risotto a try, and let me know what you think of this wonderful side dish.

This recipe comes from Nigella Lawson, and it is truly delicious!  This baked egg and potato hash makes a lovely dish for breakfast or brunch.  I admit that before this recipe I'd never made eggs like this, but I always appreciate new ways to cook something!  Try adding some fresh fruit or muffins to add some variety to your meal (I have a number of recipes on this blog if you need ideas).

I found Sriracha sauce to compliment this dish, but you can use whatever hot sauce you prefer for extra flavor.

Every once in a while, I crave a good juicy steak, and this recipe does the job perfectly!  I found this simple and delicious recipe in the May 8, 2017 edition of People magazine.  This recipe was created by Jessica Seinfeld.  She gives perfect instructions for preparing steaks, and the blue cheese butter is scrumptious!  Fast and easy to be prepare, you will not be disappointed with this yummy dish.

  • 2 (1 1/2 pounds, about 1 inch-thick) bone-in rib-eye steaks
