With the Easter holiday approaching, so is the meal that accompanies it, and this recipe from The Pioneer Woman is perfect for leftover ham.  I made this recipe for my family last week, and they loved it!  I wanted to share these scalloped potatoes with you as it is guaranteed to be a crowd pleaser.  This dish has layers of thinly sliced potatoes that are topped with a rich white cream sauce.  It is a wonderfully delicious meal!

Tips: 

I used a mandolin to slice the potatoes - it makes preparation fast and easy!  If you do not have a mandolin, I recommend the Benriner Japanese mandolin.  You can purchase this awesome mandolin on Amazon.  I absolutely love mine and have had it for several years now.  Just be careful with it - the blades are extremely sharp!

These potatoes are an absolute favorite among my family and friends!  They are the perfect mashed potatoes for the Christmas holidays.  If you love garlic, this is most definitely the dish for you.  The recipe calls for garlic herb butter - which means that it is no more extra work than your usual mashed potatoes.  There is no messing with garlic cloves, and extra steps as the butter is all that's needed.  This butter really does make these mashed potatoes shine.  Rich and creamy mashed potatoes are a great addition to any meal, and the garlic taste just makes everything better.  If you're looking for a mashed potato recipe, I highly recommend you give these a try!

I use Kerigold garlic and herb butter.  You can find this butter along with the other butters in the refrigerated section of your grocery store.

This recipe comes from Nigella Lawson, and it is truly delicious!  This baked egg and potato hash makes a lovely dish for breakfast or brunch.  I admit that before this recipe I'd never made eggs like this, but I always appreciate new ways to cook something!  Try adding some fresh fruit or muffins to add some variety to your meal (I have a number of recipes on this blog if you need ideas).

Tips:

I found Sriracha sauce to compliment this dish, but you can use whatever hot sauce you prefer for extra flavor.

You can also season with fresh ground black pepper.

This is a great summer side dish that compliments any main meal.  I personally like to make this delicious green bean dish when I am serving grilled meat.  This side is a bright and flavorful combination of good-for-you vegetables.  I find that sometimes vegetables can be boring (especially if you do the same things with them) in looks and taste, but not so with this recipe!  The garlic and red pepper add great flavor and a spicy kick that your mouth will enjoy immensely.  You and your family will savor these green beans and potatoes in a chunky tomato sauce - so much that you may even forego the meat!

Tips:

Tender young green beans work best for this recipe.

Are you looking for an easy weeknight meal?  Try this wonderful chicken dinner!  It is simple to put together, and my family approved of it heartily.  It would be a fine dish for company too.  I adapted it from the January 2014 edition of Southern Living magazine.  It is a lovely dish that brings to mind a rustic French countryside.  The lemon adds a brightness to the chicken, while the rosemary and garlic mellows the flavors into something quite extraordinary.  It really is delicious!  Serve with a crusty French bread to round out this meal and be prepared for compliments!

Tips:

I like to smash my garlic cloves with the skin on.  Take your chef's knife, and give the clove a good smack.  The skin should peel right off the clove.

I was never a fan of capers, until I started to rinse them.  Now, I love them.  If you like them as is, then no rinsing necessary!

This awesome recipe comes from the March 2014 edition of Southern Living, and it is excellent!  This recipe is a lot easier than it looks, and the results are spectacular.  The lamb was tender and done to perfection, while the herbs added a delightful flavor to the meat.  The potatoes that you cook with the lamb are simple, but flavorful.  They compliment the meat.  April is an excellent time to give this delicious lamb roast a try.  It is especially good if you are entertaining guests.  This would make a wonderful holiday meal (whether for Easter, a birthday, or even mother's day).  If you do have leftovers, look for the lamb pita pockets on our blog.  It will be posted this month too.

Here is another great recipe from Clodagh's Irish Kitchen by Clodagh McKenna.  I have been mashing potatoes for over twenty-five years, and I thought my potatoes were pretty good.  That was until I tried these creamed potatoes!  The ingredients are simple, but the procedure is what makes these potatoes "creamy".  Check out this recipe and taste these creamy mashed potatoes for yourself!

Ingredients:

2 1/4 pounds Yukon Gold potatoes

1/3 cup warm milk

1/4 teaspoon freshly grated nutmeg (optional)

3 1/2 tablespoons butter

sea salt and freshly ground black pepper
