With the Easter holiday approaching, so is the meal that accompanies it, and this recipe from The Pioneer Woman is perfect for leftover ham.  I made this recipe for my family last week, and they loved it!  I wanted to share these scalloped potatoes with you as it is guaranteed to be a crowd pleaser.  This dish has layers of thinly sliced potatoes that are topped with a rich white cream sauce.  It is a wonderfully delicious meal!

Tips: 

I used a mandolin to slice the potatoes - it makes preparation fast and easy!  If you do not have a mandolin, I recommend the Benriner Japanese mandolin.  You can purchase this awesome mandolin on Amazon.  I absolutely love mine and have had it for several years now.  Just be careful with it - the blades are extremely sharp!

A traditional treat during the Easter season, these rolls are easy to prepare and yummy to eat.  Hot crossed buns are traditionally filled with raisins or currants, just as these are.  They are wonderfully spiced and have a subtle sweetness.  These buns perfectly pair with coffee or a strong tea.  They are very filling too - perfect for breakfast!  This wonderful recipe comes from King Arthur Flour and makes a lovely soft roll that will have you coming back for more.

Tips:

If you do not have a heavy duty mixer, you can prepare the dough by hand.  When the fruit is cool, mix all of the dough ingredients along with the fruit and any liquid not absorbed.  Turn the dough out to a lightly floured surface.  Knead the dough for about seven minutes and then continue on according to directions.

For a more tender roll, after you let the dough rise (for 1 hour), punch the dough down and let rise for another 40 minutes.  Continue on according to directions.

Now this is the way to have your Baileys and coffee!  This delicious dessert comes from Clodagh's Irish Kitchen and is easy to prepare.  It is also pleasing to the eye.  If you are a fan of tiramisu or trifles, you will certainly enjoy this Irish-Italian dessert!  You can make this treat in individual portions (as shown by the pictures) or if you prefer, one big beautiful bowl.  Either way, friends and family will love this Irish take on an old Italian classic.

Tips:

This recipe calls for raw egg yolks.  If you are concerned about the safety of using raw eggs, please do not make this dessert.

The original recipe called for a 1/2 cup cocoa, I prefer to use about a 1/4 cup cocoa.

The stronger the coffee the better flavor the dessert will be.

This delicious meal is perfect for the month of March (or really anytime of the year as it really is tasty).  With St. Patrick's Day being on March 17th, why not start the celebration early with this incredible slow cooker recipe?  The recipe (which I found in the Irish Cooking Bible cookbook) calls for a bottle of Irish stout beer and is simple to make.  It also is perfect with my garlic and herb mashed potatoes.  These fall-off-the-bone ribs will be an instant hit with friends and family for many years to come!

Tips:

I used a bottle of Guinness stout beer and the flavor came out fantastic!

You can chop up the raw bacon and cook according to the recipe, or you can cook the bacon whole, drain on paper towels, and crumble bacon once cooled.

This wonderful pie comes from Emeril Lagasse and is great for Saint Patrick's Day!  This recipe has crème de menthe and crème de cocoa in the filling as these liqueurs enhance the flavors of the pie.  The crème de menthe adds a subtle mint taste to the filling, while the crème de cocoa adds a hint of cocoa flavor.  The filling compliments the Oreo cookie crust perfectly.  This pie is great anytime of the year, but I specifically decided to post this recipe in March as the pie's lovely green color makes it a great dessert for any Saint Patrick's Day parties.  I hope you enjoy this delightful pie!

Tips:

Have the egg yolks and sugar ready in the bowl so you can begin drizzling the hot cream/gelatin mixture.  This process will bring the egg yolks to a safe temperature for consumption.

These mini cupcakes are just adorable!  They are topped with a chocolate chip cream cheese layer and are absolutely delicious.  These black bottom cupcakes are rich and decadent for such a little sweet.  This recipe only takes about an hour, and I highly recommend you try it if you like chocolate.  The recipe makes about 4 1/2 dozen, so there will be plenty to go around if you have the urge to share, and they freeze great (if you don't eat them all within the first day as they are really addicting).  Try these delightful black bottom mini cupcakes, and you will have a perfect fix for any chocolate cravings!

If you are looking for an easy Valentine's dinner for two, look no further!  This delicious steak dinner comes from Martha Stewart, and I love the simplicity of this meal!  The recipe is easy and straightforward, leaving you plenty of time to enjoy that special person in your life.  I also included a recommendation for a wine pairing in the tips section that makes this delicious meal shine.  I really encourage you to try this recipe, because it truly is a winner.

Tips:

Either the day before or the morning that you prepare the steak, I suggest that you rub the steak (or steaks if you double the recipe) generously with Kosher salt and freshly ground black pepper.  Use up to 1 teaspoon Kosher salt per pound and about a 1/2 teaspoon black pepper per pound.  Place the salt and pepper rubbed steak on a rack, and place the rack on a cookie sheet or other large pan.  Put in refrigerator, about 6 to 24 hours, without covering it.  Let it sit one hour at room temperature...

Happy Valentine's Day everyone!  This special day of expressing love to those closest to you (whether family, friends, or a significant other) is a perfect occasion to bake something sweet and chocolatey.  These molten red velvet cakes bring a special ending to your Valentine's Day dinner, and they look and taste amazing!  I found this yummy recipe in the February 2017 edition of Southern Living magazine.  This dessert is amazing for sating my sweet tooth, so I hope it sates yours too!

Raspberry and chocolate are a perfect marriage of flavors.  There is something about the sweetness of the berries and the richness of the chocolate that gets our taste buds salivating.  I found this rich chocolate dessert recipe on a Baker's Semi-Sweet Chocolate bar.  It is a very easy pie to make, and my family absolutely loved it.  With only 5 ingredients and 15 minutes of your time, you will have a beautiful and delicious pie!  This would also make an amazing dessert for Valentine's Day.

Tips:

I used a can of chocolate frosting to hide the foil edging of the pie.  I found the frosting in the baking aisle of the grocery store.

I like to keep the chocolate filling of the pie chocolate, so I did not add raspberry jam to the chocolate filling.  I put the raspberry jam on top of the chocolate instead of mixing them.  You can do it either way as I will include both ways in the recipe.

Mardi Gras, this year, is on Tuesday, February 13th.  It is the Tuesday before Ash Wednesday.  In America, Mardi Gras is celebrated particularly in the South.  In New Orleans, Louisiana, there is a large, wild celebration every year.  Mardi Gras is French and translated means "Fat Tuesday".  In honor of the celebrations that will be happening in New Orleans and throughout the South, I give you Cajun shrimp linguine.  This spiced up linguine comes from the May 2016 edition of Cooking Light magazine, and it is delicious! 

If you're not a fan of spicy dishes, simply add less of the ground red pepper but do add at least a little for some pizzazz!  The heat from the red pepper is tempered by the addition of half & half and gives this delicious pasta dish a well balanced warmth.  If you aren't celebrating Mardi Gras this year, this pasta would also be a great pasta dish for Valentine's Day which is a few days after Mardi Gras.
