This is the recipe that I use when I need lots of whipped cream during the holidays.  I figured it would be a good post for readers who have never done whipped cream before, or even those who want a bit of a refresher (if they haven't done whipping cream in a while) during the holidays.  Any extra can be stored in a refrigerator.  If it starts to liquefy, you can simply re-whip it!  It's very easy.

Tips:

Place the whipping cream, bowl, and beaters in the freezer for about 10 minutes before making the whipped cream.  The process will go faster if everything is very cold.

Total time is 15 minutes.

Ingredients:

2 cups whipping cream

2/3 cup powdered sugar (also called confectioner's sugar)

1 teaspoon vanilla

Directions:

Beat the whipping cream at high speed with an electric mixer, until soft peaks form.  Add the powdered sugar, and mix until stiff peaks form.  Add the vanilla; mix well.  Yields about 2 1/2 cups of whipped cream.

Rhubarb is a vegetable that is most often used in baked sweet desserts.  To me, it brings to mind a plant that I would find in grandma's garden - somewhat old fashioned, but still delicious.  I have a few rhubarb plants in my garden, because my family enjoys eating the baked sweets that I make with their stalks.  One of the desserts I make is the rhubarb upside-down cake.

This cake is sweet and goes great with the tartness of the rhubarb.  This recipe is from my mother-in-law, and it is a family favorite that I wish to share with you.  If you have never had rhubarb, this is a great recipe to introduce rhubarb to your palate.  Also, whipped cream compliments this cake perfectly, so give it a try!

Tips:

Rhubarb is often found in the produce section of the local grocery stores during spring and early summer.  The ones that I see here are red in color.  The rhubarb that I grow is green (with a little red).  It all tastes the same, so buy whatever is available....

Along with most of the worlds population, I am addicted to chocolate.  Every once in a while (or everyday), I have to feed my craving!  These little chocolate cupcakes are perfect for a chocolate fix.  I found this recipe in Southern Living magazine, the April 2017 edition.  If you crave intense chocolate, you will enjoy the original recipe.  I was curious to see what the outcome would be with a few changes to the original recipe.  Instead of dark chocolate, I used semi-sweet chocolate chips.  My family liked these cupcakes even better than the original ones!  I topped the cupcakes with whipped cream and a few raspberries.  It was scrumptious.  The raspberries, chocolate, and cream complemented each other perfectly.  You can't go wrong with chocolate!

Tips:

You can substitute semi-sweet chocolate chips for the dark chocolate chips.  You can also do a combination of the two chocolates, if you prefer.  Just make sure that you have 1...

It's strawberry season, and I can't think of a better way to enjoy these scrumptious berries than in a pie.  This pie is an absolute favorite among my family, and I guarantee that if you love strawberries, you will have a difficult time only eating one slice.  This dessert is unforgettable - with whole strawberries placed on top of a sweet cream filling and a homemade strawberry glaze poured over the pie.  Give this pie of the month a try!  It really is amazing.

Tips:

If you have any leftover glaze, you can refrigerate and use in plain yogurt or use like a strawberry jam.

Please refer to pictures when whipping cream.  You want soft peak for the initial whipping.  When you whip the cream and cream cheese together, you want a stiff peak.

Organic strawberries will give you the best strawberry flavor.  I highly recommend buying organic strawberries for this pie, even though you will pay more.

It's Valentines Day, and here is my gift of love to you - the recipe for a fantastic Chocolate Cream Pie.  You're welcome.  Seriously, this pie is absolutely the best chocolate pie that I and my family have had so far.  In fact, I have never been a fan of chocolate cream pie, until I came across this recipe.  As a bonus, it is easy to make too!  The filling makes a rich chocolate pudding.  This pudding is so yummy that it is very hard to resist.  I'm sure you will love this pie!

The whipped cream topping is a great compliment to the rich chocolate filling.  I really like this topping because all you taste is the sweetened whipped cream and not the cream cheese.  This topping will hold for days.  It will not turn into a liquid mess like a typical whipped cream topping.  I love it!  You can present your beautiful pie with additional chocolate shavings, sprinkled on top of the whipped topping to dress it up a little.  I think I'm in love with a pie....
